Baked Oatmeal with Apples and Raisins

33 1/3 cups rolled oats*
25 cups canned apple slices
6 1/4 cups brown sugar
12 1/2 cups raisins
12 1/2 tsp. baking powder
1 1/4 Tbsp. cinnamon
34 eggs, large
264 fl . oz. milk, 1%
1 qt. + 2 Tbsp. + 2 tsp. vegetable oil
12 1/2 tsp. vanilla

Serves 100

Per Serving 370 cal., 9 g pro., 14 g fat, 2 g sat. fat, 56 g carb., 4 g fiber, 124 mg sod., 18 g sugars

Meal Pattern 1-oz.-eq. whole grains, 1/2 cup fruit

1 Preheat the oven to 350°F. Use the vegetable oil to prepare four 2x20-in. steamtable pans.

2 Chop the apple slices into bite-size pieces, then spread these evenly across the bottoms of each of the four pans.

3 In a large bowl, mix together the oats, brown sugar, raisins, cinnamon and baking powder. Set aside.

4 In a separate bowl, combine eggs, milk and vanilla, and whisk well.

5 Add the liquid mixture to the oat mixture and stir to combine.

6 Pour the oatmeal mix over the apples, dividing evenly among the four pans. Bake for 40 to 45 minutes until the top is golden and the oats are set.

7 Remove the pans from the oven and allow to cool slightly before portioning into 100 servings, approximately 4x2.5-in. each.

*Notes: Quaker Old Fashioned Rolled Oats can be used in this recipe.
